In 2023, we featured the Grand Éclat 2015, which aged for 6 years compared to the 7 years for this 2016. Differences in aging are one tool in a winemakers craft to adapt to the varying conditions each year's harvest presents.

Sips & Scents

This vintage champagne gets its character from the famous chalky soils of the Grand Cru Village of Chouilly, and over seven long years of aging. There’s a purity to this wine, with ripe orchard fruits, floral notes, and the aromas of fresh baked pastry dough. Dry and crisp on the palate, it is elegant but also complex and perfectly balanced, with a bright and long finish.

Perfectly suited to classic pairings, this complements paté, brie or other creamy cheeses, potato chips, french fries, mac and cheese, lobster rolls, and, of course, fried chicken.

Hands Behind the Bubbles

Founded in 1929 by André Champion, his son, Roland, at just 16 years of age, took over the vineyard after Andre’s unfortunate early passing. Roland grew the vineyards, eventually putting his name on his family’s Champagne. Today, Roland’s son, François (3rd generation), is the oenologist with his daughter Carole (4th generation), now operating much of the business. I was fortunate enough to sit down with Carole to taste this lovely champagne.
