Sips & Scents

Made in the champagne method and aged a minimum of 3 years, its fine bubbles offer up aromas of green apple, pear, white peach, subtle pastry notes and hints of baking spices. There’s a creaminess to the bubbles and some tension that takes time to evolve. It may be hard to resist, but take your time with this bottle, Let it breathe for 15-20 minutes and evolve. This sparkling wine evolves and improves after opening and I found it equally if not more enjoyable on the second day as the spice notes became more pronounced.

Whether as an aperitif or with food, you can’t go wrong with dishes from Spain. Iconic dishes like Spanish rice, jamón Ibérico, manchego cheese, patatas bravas, and gambas al ajillo make perfect matches.

In 2020, in the hills above Barcelona, they began working with less than 4 acres of vines. They chose not to use the “Cava” designation due to the reputation of mass produced Cava being unremarkable. With a passion for Xarel-lo grapes and old vines they’re quickly building a reputation for exceptional wines, this bottle being a prime example.
