An incredible example of what American sparkling can be. It's not easy to make sparkling of this caliber and quality. This wine is produced with the same meticulous and painstaking level of expertise as top champagnes. Grapes are hand harvested, sorted and gently pressed. The wine rests on the lees for over 4 years plus spends 1 additional year resting after being disgorged. Almost no Americans produce bubbly in this exacting manner.
How does it come to happen like this? Well the family worked very closely with internationally renowned winemaker, the late Michel Salgues who developed the foundational techniques for their winemaking practices.
