A great example of the quality of sparkling wine that can be found in this southwest section of France. This sparkler carries lively citrus aromas, along with orchard fruits and lovely dried floral notes. More delicate and complex than one might expect, the wine is refined, with the acidity nicely balanced by the Brut level dosage. A perfectly crisp summer sparkler to enjoy.

Hands Behind the Bubbles

Philippe Collin’s family has made champagne for generations. With the cost of trying to establish his own Domaine in Champagne so expensive, he decided to move to the Languedoc region. Even though Limoux is much further south than Champagne, it’s a cooler area with a little altitude near the foothills of the Pyrenees, with soils of clay, sandstone, and limestone, all of which make for ideal growing conditions. Going for high quality from the start, Philippe planted Chardonnay, Pinot Noir, and Chenin Blanc to provide acidity, depth, and texture to his wines. Already possessing expertise and generational knowledge of producing champagne, it’s no surprise his sparkling wines are impressive.
