The wine presents fine bubbles and aromas reminiscent of citrus fruits, quince and green apples, complemented by an invigorating acidity that makes it irresistibly drinkable. On the palate the wine exudes flavors of tropical fruit and white flowers, underpinned by a distinct chalky minerality. This high-acid sparkler is best described as crisp, thirst-quenching and ridiculously easy to drink.

Hands Behind the Bubbles

Matthias Hild and his son, Jonas, tend to five hectares (12 acres) in the Upper Mosel. Unlike the slate-dominated lower Mosel, the soils here are primarily limestone and chalk. Matthias is on a mission to preserve the old, terraced parcels of Elbling. This labor-intensive process, coupled with lower yields, is more an act of cultural preservation than a profit-driven endeavor. This delightful sparkler is produced in the traditional method and aged on its lees for nine months, reflecting Hild's commitment to quality and tradition in this often-overlooked corner of German wine country.
