80-15:
Aromas of plums and other stone fruits, along with floral notes and nuts (hazelnuts, fresh walnuts) in the background. Later, aeration reveals the complexity of the blending, with hints of spice and linden coming through.
The palate is initially supple, followed by a feeling of roundness that predominates. The wine is ripe but softened by the effervescence. The acidity and dosage are restrained, and the overall texture is full and soft. The finish is like the palate: harmonious, supple, and aromatic. It fades away on a slight note of astringency.

00-15:
Aromas of flowers and pears. There are also beautiful spicy notes (white pepper) as well as a hint of smoke, this is linked to the maturity of some of the wines in the blend. The palate is at first supple, the body of the wine blossoms, and the rich texture aligns with the delicate freshness of the acidity, giving an impression of serenity. This cuvée reveals a round palette that is dynamic, tender, delicate and welcoming. The finish is harmonious, long, and structured with a trace of minerality.

Champagne Goutorbe-Bouillot is a small family estate in Damery, just west of Epernay. They've been making Champagne since 1919, and they do everything themselves, growing the grapes, making the wine, the whole process.

Their Retrospective cuvées—the 00-15 and 80-15—use perpetual reserves dating back to 1980 and 2000. These bottles age on lees for 8 years, which gives them real power and structure. Production is tiny, under a thousand bottles. They're tense, structured Champagnes that show what this approach can do.
