Limited Special Champagne Offer - 3 Pack of Blanc de Noirs

1. Domaine Bichery is Raphaël Piconnet and Hannah Boesel whoi returned to family vineyards to found the Domaine in 2015. They're part of the new generation crafting only zero-dosage wines from their 7 hectares (16 acres). Organic since 2019, their winemaking is non-interventionist, using native yeast, no fining or filtration, with a desire to express the purity of Pinot Noir from their vines.

2. Paul-Bastien Clergeot represents Champagne's next generation of growers rewriting tradition. After studying oenology, Paul took over his family's vineyards, which had long sold grapes to large houses. He founded Champagne Petit Clergeot in 2017 and converted to organic farming in 2021. Each parcel is worked separately, and for the steep-sloped Les Commes, he does not turn, till, or fertilize the soil. Instead, a small flock of sheep is used to graze and help fertilize.

3. Charles Dufour, son of Françoise Martinot, is one of Champagne's most sought-after grower-producers. Charles has 6 hectares of his own, and Françoise has 4 hectares of her own. Charles farms his mom's vineyards himself, crafting champagnes with the same approach and philosophy as his own Bulle De Comptoir cuvées. All their vines converted fully to organic in 2010, with Françoise driving the push for sustainable farming. Dufour avoids chemicals, ferments with native yeasts, uses minimal sulfur, and bottles without dosage. Annual production is tiny, with Bistrotage releases usually being only a few thousand bottles, making B-19 an unusually accessible glimpse into the style of a winemaker whose wines are otherwise almost impossible to find.
