This is as close as you can get to calling any bottle of champagne a natural wine. On the nose, the aromas are reminiscent of a freshly baked apple tart alongside roasted pears and crème brûlée. The flavors are both deep and delicate with freshness and acidity that harmonizes with its aged characteristics, culminating in a long and gratifying finish.
This Champagne shines as both an aperitif and a dinner companion. It can stand up to more acidic foods, such as pickled herring, followed by more savory offerings such as roast turkey, mashed potatoes, prime rib, mac and cheese and any fried foods.
Charles Dufour is a small organic production vineyard spanning only 15 acres. He originally created #1 (in 2010) as a bottle to drink at the bar with friends and sold it to a local restaurants and retail shops. From there, its popularity soared, resulting in a new numbered annual release. What's on the label? It’s a tribute to a retiring winery team member. An artist captured the worker at harvest and the man wasn’t informed by Charles until he saw a finished, labeled bottle.
