This does not spend a super lengthy time on the lees, but it tastes much older than it is. A complex bouquet of aromas with notes of green apple, white flowers, pear, candied orange peel and lemon. Red fruits from the pinot are present with lightly toasted almonds and fresh bread. Intentionally made with a tad less pressure (4.5 vs 6 bars) to better express the characteristics of the land and grapes, this is a delicate, well balanced champagne with a refreshing finish.
This balanced acidity and creaminess make this an easy to enjoy with light pasta dishes, scallops, grilled shrimp and a board of cured meats, gouda and brie. Fried tempura veggies or calamari and french fries won’t disappoint. Pick up some sushi on the way home for a fun and easy elegant meal.
Waris-Larmandier Champagne was founded in 1989 by 5th generation grower Marie-Hélène Larmandier and her husband, Vincent Waris. After Vincent's passing, Marie-Hélène continued managing the business. Her eldest son, Jean-Philippe Waris, took charge of the vineyards and winemaking in 2009, converting their 9 hectares to biodynamic and regenerative farming practices. They’ve been certified biodynamic since 2020. His brother Pierre-Louis and sister Inès soon joined, and the family now runs the business together with their mother.
