Notable

The Symbiose spends a minimum of seven years on the lees. More than double what Champagne requires for a vintage wine, and on par with some of the best prestige cuvées.

Sips & Scents

After 10 years in the bottle, 7 years on lees, and 3 more resting, there is a lot happening in the glass. A lovely golden hue in the glass, it opens with floral scents, fresh apple, citrus, and light honey. Toasted pastry and notes of walnuts emerge after a little time in the glass. Time in the bottle built real texture here. The palate is silky and precise, with candied lemon, ripe pineapple, and a red berry tart. It all finishes clean, dry, and long. A champagne with richness and layers of flavor to savor and appreciate.

Perfect Matches

The richness of this champagne shines as an aperitif but can handle a light meal. Chips, mild soft cheeses, pâté, and prosciutto work well. Feeling casual? Roast chicken straight from the rotisserie is perfect here. This bottle has its place at the table or on the couch.

Hands Behind the Bubbles

A family affair since 1935, Champagne Fluteau is one of the oldest grower families in the Côte des Bars. Emile Hérard and son-in-law Georges Fluteau planted their first vines in Gye-sur-Seine, and four generations later, the estate remains family-owned. The nine hectares (22 acres) in the Côte des Bars are now run by Jérémy Fluteau and his sister Adeline, building on the work of their parents. Their philosophy is simple: champagne should tell you exactly where it came from. Certified sustainable under HVE, they farm with organic fertilizers and do not use any chemical herbicides or pesticides. Symbiose represents the association between the two varieties: the delicacy of Pinot Noir and the lightness of Chardonnay. Assembled in equal parts, it is a harmonious champagne with a subtle balance between freshness and intensity.
