Hands Behind the Bubbles

Filipa Pato learned winemaking from her father, Luis Pato—known as "the Baga Rebel" for revitalizing Bairrada as a serious wine region. Her grandfather João was the first to bottle wine in Bairrada after it gained official status. Filipa studied chemical engineering before working harvests in Bordeaux, Mendoza, and Margaret River, then launched her own project in 2001. Her vineyards are certified biodynamic and she farms with her husband William Wouters, a Belgian sommelier champion. Their philosophy is simple: create "authentic wines without makeup." “3B” stands for Bairrada, Baga and Bical, the core of this project. Native yeasts, lees aging and minimal intervention keep the wine focused, clean and true to place. In 2020, Filipa became the first Portuguese woman named Winemaker of the Year in 30 years.
