Sips & Scents

The aromas open with scents of golden apple and ripe white peach, then slowly reveal pear, raw honeycomb, and wildflowers. Hints of nutmeg and fresh sourdough appear as it opens. On the palate, the mousse is fine and creamy, with honeyed white orchard fruit and a minerality that continues long after the first sip. There’s a little more complexity here than most crémants from Alsace. Using a wine glass, not a flute, will allow this crémant the air it needs to reveal all its flavor.

Perfect Matches

As an aperitif, of course with cheeses like Brie, Camembert, and fresh goat cheese. Also great with shellfish, hams and roast turkey or chicken. Simple enough for weeknight takeout, elegant enough for the dinner table. A favorite option is the couch, netflix and some of that cheese.

Hands Behind the Bubbles

In 1985, Geneviève Buecher and François Barmès joined their families' landholdings, vines their ancestors had tended since the 17th century. A decade later, François began converting the domaine to biodynamics in 1995, one of the first in Alsace to do so. The goal was to undo what decades of chemical farming had done to the land. Today, son Maxime carries that commitment forward with the same conviction. He replaces tractors with horses in the vineyard wherever he can, and in the cellar, the philosophy is minimal intervention, just enough support to let the wine reveal itself. In Maxime’s words, what he wants and does is “the ultimate representation of what the grape can offer in a terroir. We are allowing it to reveal itself to us and transmit the incredible energy of the environment in which it grows.”
