Sips & Scents

This champagne pours golden copper with extra color coming from a little extended skin contact. The aromas deliver strawberry, red currant, and orange citrus alongside green apple, stone fruit, and classic brioche. The palate has a grippy, rich texture with red fruit notes mingling with the brioche character. Each sip finishes crisp and dry with richness and lingering acidity. I love champagnes like this—bone dry but with a richness of fruit that can make you swear it’s sweet. We’re fortunate to have this inaugural release from a talented winemaker.

Perfect Matches

Pan-seared scallops, parsnip puree, and fresh herbs with a squeeze of lemon. Oysters, shellfish, light fish, or sushi. Snack on potato chips, truffle fries, and some crumbly cheese.

Hands Behind the Bubbles

Arthur Lelièvre and his sister Ophélie are the sixth generation to lead their family's Forget-Chauvet estate. The Forget family's roots in Ludes trace back before the French Revolution. In 1950, Arthur's great-grandparents and grandfather released the first Forget-Chauvet bottle. Arthur returned to the estate in 2014, began eliminating chemical use, and transitioned to sustainable and organic practices. While preserving the family legacy with Forget-Chauvet, Arthur launched his own label as a space to refine his personal vision.
